Salon makes exactly one wine, only in years they consider good enough — sometimes skipping a decade between releases. It comes from a single village in Champagne famous for chalk-driven Chardonnay, and 2004 is considered one of the great recent vintages. Bottles cost several hundred dollars and are genuinely hard to find.
