
Dauvissat is widely considered the top grower in Chablis, making wine from old vines on some of the appellation's best plots. La Forest is one of his premier cru vineyards — a step below his grands crus but still serious Chablis: lean, chalky, almost austere, nothing like the soft oaky Chardonnays most people know.
