
Bertrand Gautherot farms a tiny plot in the Aube, the southern edge of Champagne, entirely by hand without chemicals. This wine is pure Chardonnay grown on clay soils with zero sugar added — the opposite of polished, commercial Champagne: raw, real, and made in very small quantities.
